Oxalic acid, also known as oxalic acid, is a colorless columnar crystal widely found in plant-derived foods. It is soluble in water and insoluble in organic solvents such as ether. Oxalate acts as a metal chelating agent in plant food, affecting the bioavailability of essential minerals. When combined with alkaline earth metal elements, its solubility decreases, while with transitional metal elements, soluble complexes are formed, increasing solubility.
Oxalic acid sublimates at 100°C, rapidly at 125°C, and decomposes at 157°C. It can react with bases to produce esterification, acyl halogenation, and amidation reactions. Reduction and decarboxylation reactions can also occur. Anhydrous oxalic acid is hygroscopic and forms water-soluble complexes with many metals.
