Character: It's colorless transparent crystal or white crystalline powder. The relative density is 2.534 and melting point is 880ºC. It's easily soluble in water and insoluble in ethanol. It will weather in dry air and lose crystal water in 100ºC. It easily absorbs water to deliquesce in air.
Usage: It is used as quality improver, regulator of PH value, chelating agent, emulsifier and binder in food industry. It also can be used in the processing of baking powder and cheese.
