Character: Colourless or white crystalline granule or crystalline powder, odorless, tastes salty and cool. Soluble in water, difficulty in ethanol and slightly deliquescent in moist air. pH value is 7.6-8.6 in 5% aqueous solution. If heated to 150ºC, it may lose crystal water.
Usage: In the food processing industry, it is used as a buffer, chelating agent, nutrition supplement, emulsification, and flavoring for yogurt. It can abirritate the sourness of citric acid in cool drinks, prevent the acidification of dairy products, act as a binder in cheese and minced meat, gelatinize in jellies and syrup, and serve as an emulsification and stabilizer in cheese and ice cream.
Packing: It is packed with a polyethylene bag as a liner and a compound plastic woven bag as the outer layer. The net weight of each bag is 25kg.
