Character: Colourless or white crystalline granule or crystalline powder, odorless, tastes salty and cool. Soluble in water, difficulty in ethanol, slightly deliquescent in moist air. pH value is 7.6-8.6 in 5% aqueous solution. May lose crystal water when heated to 150°C.
Usage: Used in the food processing industry as a buffer, chelating agent, nutrition supplement, emulsifier, and flavoring for yogurt. Helps abirritate the sourness of citric acid in cool drinks, preventing acidification of dairy products. Acts as a binder in cheese and minced meat, gelatinizes in jellies and syrup, and serves as an emulsifier and stabilizer in cheese and ice cream.
Packing: Packed in polyethylene bags as a liner and a compound plastic woven bag as the outer layer. Each bag weighs 25kg.
