Character: White to off-white crystalline powder or granule. Almost inodorous, slightly weathers in dry air. Very soluble in hot water with a pH value of 6.0-7.0. Almost insoluble in ethanol.
Usages: Used as a buffering agent, dough conditioner, yeast food, nutritional supplement, firming agent, antioxidant synergist, antioxidant, fruit & vegetable color protecting agent, and flavoring agent. Ideal as a dietary supplement and nutrient, commonly used in pharmaceuticals.
