DL-Malic acid is a versatile acidulant used in a variety of products such as cool drinks (including lactobacillus drinks, milk drinks, carbonated drinks, cola), frozen foods (including sherbet and ice cream), processed foods (including wine and mayonnaise). It acts as a color-keeper and antiseptic in juices, as well as an emulsion stabilizer in egg yolk. Additionally, DL-Malic acid finds applications in cosmetics, rinses, metal cleaners, buffering agents, retarders in the textile industry, and as a fluorescent whitening agent for polyester fiber.
