Character: Colorless transparent crystal or white crystalline powder. Relative density of 2.534 and melting point of 880ºC. Easily soluble in water, insoluble in ethanol. Weather in dry air and loses crystal water at 100ºC. Absorbs water to deliquesce in air.
Used as a quality improver, pH regulator, chelating agent, emulsifier, and binder in the food industry. Also applicable in the processing of baking powder and cheese.
