Lipase NE, produced through submerged fermentation of Thermomyces lanuginosus, offers efficient hydrolytic activity across a broad temperature range (40-65ºC) and under weakly acidic to alkaline pH conditions. This versatile product is ideal for ester hydrolysis, methyl esterification (transesterification), esterification, or acylation reactions in various mediums.

Functions of Lipase NE:

  1. Efficiently hydrolyzes glycerides to yield high-purity free fatty acids.
  2. Enables esterification, transesterification, or acylation reactions in anhydrous mediums, organic solvents, or oils.
  3. Enhances dough stability, improves crumb structure, whiteness, and crust luster in the baking industry, leading to increased bread and steamed bun volume. It also enhances the appearance of steamed buns.

Dosage of Lipase NE:

Recommended dosage: 0.1-0.5% by weight of substrate.

Definition of Activity:

1g of solid enzyme powder, at pH 7.5 and 40ºC, hydrolyzes the substrate in 1 minute to produce 1μmol of titratable fatty acid, defining an enzyme activity unit expressed as U/g.
