Recommended dosage: 0.1-0.5% by weight of substrate.
1g of solid enzyme powder, at pH 7.5 and 40ºC, hydrolyzes the substrate in 1 minute to produce 1μmol of titratable fatty acid, defining an enzyme activity unit expressed as U/g.
